DANELL'S BREAKFAST CASSEROLE

This is a fabulous breakfast casserole that also makes an amazing brunch dish!  Wonderful wrapped up in a warm tortilla, too! A little work but well worth the effort!

2 pounds Pork Breakfast Sausage
30 ounces Frozen Hash Browns
1/2 tsp Salt
1/2 tsp Pepper
1 cup Shredded Cheddar Cheese
6 Eggs
2 cups Milk

Preheat oven to 350°.

In a heavy skillet over medium high heat, cook and crumble sausage until no longer pink.  Drain excess fat.  Set aside. Prepare frozen hash browns according to package instructions.  In a large mixing bowl, mix together sausage, hash browns and cheese.  Press into a lightly greased 9" x 13" baking pan.  In a mixing bowl, whisk together eggs, salt, pepper and milk.  Pour over sausage mixture.  Top with a little more shredded cheese, if desired.  Bake at 350° for 35-40 minutes or until cooked through.  Makes 8-10 servings.
