CHICKEN POT PIE
Another
delight from Auntie Sara's magic recipe box!
1 2/3 cups thawed frozen mixed vegetables
* 3-4 pieces of boneless chicken thighs or breast
coarsely chopped(See prep note below)
1 10.5 ounce can cream of chicken soup
1 cup of Baking mix
½ cup milk
1 egg
*Prep Note: Prepare the chicken: Season with salt,
pepper, and seasoning salt to taste. Grill until done. Or pan fry, in
a heavy skillet coated with extra virgin olive oil and cook about 5-10
minutes per side over medium heat.
Heat oven to 350°.
In a large mixing bowl, combine vegetables, chicken and soup. Pour into
a one-quart casserole dish. In a medium mixing bowl, combine baking
mix, egg and milk. Mix until well blended. Pour over the chicken and
vegetable mixture. Bake 30 minutes or until golden brown. Makes 3-4
servings. Recipe can be doubled for larger crowds. |
